For the Chicken Marinade

- Marinate the Chicken: Combine yogurt, ginger and garlic paste, garam masala, cumin, coriander, chili powder, and salt in a bowl. Toss the chicken thighs in this marinade, ensuring each piece is well coated. Cover and let it rest for at least 1 hour, preferably overnight, to tenderize the meat and infuse flavors.
- Sear the Chicken: Heat vegetable oil or ghee in a heavy-bottomed pan over medium-high heat. Add the marinated chicken pieces and sear until browned on all sides but not fully cooked through. Remove from the pan and set aside.
- Prepare the Sauce: In the same pan, add ginger and garlic paste and sauté until fragrant. Stir in garam masala, cumin, coriander, and chili powder. Pour in the tomato puree and cook the mixture until the sauce thickens and deepens in color.
- Combine Chicken and Sauce: Return the seared chicken to the pan and stir well to coat each piece in the sauce. Simmer gently for 15–20 minutes, allowing the chicken to cook through and flavors to meld beautifully.
- Finish with Cream and Cilantro: Reduce the heat to low and slowly stir in the heavy cream to create a luscious and silky sauce. Garnish with freshly chopped cilantro just before serving for a vibrant, fresh finish.
