Ingredients

Scale

Fish

  • 4 fresh or thawed cod fillets (about 6 oz each)

Glaze

  • ¼ cup soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar or lime juice
  • 1 teaspoon sesame oil

For Cooking and Garnish

  • Salt and pepper, to taste
  • 12 tablespoons cooking oil (vegetable or neutral oil)
  • 2 green onions, chopped (for garnish)
  • Optional red pepper flakes, to taste
  • Optional toasted sesame seeds, for garnish

Instructions

  1. Prepare the Glaze: In a small bowl, whisk together soy sauce, freshly grated ginger, minced garlic, honey or brown sugar, rice vinegar, and sesame oil until fully combined. This glaze will be the star that coats your cod with amazing flavor.
  2. Season the Cod: Pat the cod fillets dry with paper towels and season both sides lightly with salt and pepper. Drying the fish helps in achieving a nice sear and prevents sticking.
  3. Sear the Cod: Heat a non-stick or cast iron skillet over medium-high heat with a small amount of cooking oil. Place the cod fillets skin-side down if they have skin, cooking for 3-4 minutes until golden and crispy. Flip gently and cook another 2-3 minutes until just cooked through.
  4. Add the Glaze: Pour the ginger soy glaze over the cooked cod fillets in the pan. Let it simmer for a minute or two, spooning the sauce over the fish to create a glossy coating. This final glaze seals in all the flavors and adds a beautiful shine.
  5. Garnish and Serve: Transfer the glazed cod to plates and garnish with chopped green onions or toasted sesame seeds for an extra pop of texture and color. Serve immediately while warm and succulent.

Notes

  • Choose fresh or properly thawed cod fillets for best texture and flavor.
  • Do not overcook the cod; cook just until it flakes easily to keep it moist and tender.
  • Use freshly grated ginger for a brighter, more vibrant flavor.
  • Adjust honey or sugar levels to your preferred sweetness.
  • Simmer the glaze gently to avoid bitterness and help it thicken slightly.
  • The glaze can be prepared up to 3 days in advance and stored refrigerated.
  • Leftover cod can be refrigerated for up to 2 days or frozen for up to 1 month.
  • Reheat gently to avoid drying out the fish.
