Ingredients

Scale

Potatoes

  • 3 pounds Yukon Gold or red potatoes, washed and cut into uniform chunks

Bacon and Onions

  • 6 slices bacon
  • 1 medium yellow or sweet onion, thinly sliced

Dressing

  • 1/2 cup apple cider vinegar
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon or yellow mustard
  • Salt, to taste
  • Freshly ground black pepper, to taste

Finishing Touches

  • 1/4 cup fresh parsley or chives, chopped

Instructions

  1. Prepare the Potatoes: Wash and cut the potatoes into uniform chunks to ensure even cooking. Boil them in salted water until just tender, about 10 to 15 minutes depending on size. Drain thoroughly and keep warm.
  2. Cook the Bacon and Onions: While the potatoes cook, crisp the bacon in a large skillet over medium heat. Remove the bacon and set aside, leaving the rendered fat in the skillet. Add the thinly sliced onions and sauté until soft and translucent, allowing them to absorb the bacon fat’s flavor.
  3. Make the Dressing: Stir apple cider vinegar, chicken broth, mustard, salt, and pepper into the cooked onions and bacon fat. Let the mixture simmer gently for a few minutes to meld the flavors.
  4. Combine Potatoes and Dressing: Return the warm potatoes to the skillet and gently toss them in the warm dressing. Crumble the cooked bacon over the top and stir in fresh parsley or chives for color and brightness. Serve warm or at room temperature for optimal flavor.

Notes

  • Choose waxy potatoes like Yukon Gold or red potatoes to hold their shape better.
  • Do not overcook potatoes; they should remain slightly firm to avoid a mushy salad.
  • Toss warm potatoes with warm dressing to help absorb flavors.
  • Adjust the vinegar quantity to customize acidity to your taste.
  • Add fresh herbs last to preserve their vibrant color and aroma.
