Mashed Potatoes

  • 2 lbs Russet or Yukon Gold potatoes, peeled and cut into chunks

  • 1/2 cup warm milk or cream

Instructions

  1. Prepare the Potatoes: Peel and cut the potatoes into even chunks. Boil them in salted water until tender, about 15-20 minutes. Drain well and return to the pot to dry out slightly.
  2. Mash with Butter and Milk: Add softened butter, warm milk or cream, salt, and pepper to the drained potatoes. Mash until smooth and creamy; adjust seasoning as desired. Keep warm while preparing the shrimp.
  3. Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant — about 1 minute — being careful not to burn it.
  4. Cook the Shrimp: Add the shrimp to the skillet and cook for 2-3 minutes per side, until they turn pink and opaque. Season with salt, pepper, and optional red pepper flakes.
  5. Combine and Serve: Serve the garlic shrimp over a generous scoop of mashed potatoes. Sprinkle with freshly chopped parsley or chives for an inviting finish.
