Instructions

  1. Prepare the Shrimp Scampi Sauce: Heat butter and olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant but not browned. Add shrimp, season with salt and pepper, and cook until pink and opaque. Deglaze the pan with white wine if using, then finish with lemon juice and zest. Set aside.
  2. Mix the Cheese Filling: In a bowl, combine ricotta cheese, grated Parmesan, chopped parsley, salt, and pepper until smooth and well blended.
  3. Assemble the Lasagna Layers: Spread a thin layer of the garlic butter sauce in the bottom of a baking dish to prevent sticking. Layer lasagna noodles, then spread a scoop of the ricotta mixture, followed by shrimp and garlic butter sauce. Sprinkle mozzarella cheese over the top.
