Instructions

  1. Prep Your Ingredients: Rinse and halve the baby potatoes to ensure even cooking. Pat the chicken thighs dry thoroughly to achieve crispy skin when seared. Mince the garlic and chop the fresh herbs so everything is ready to use.
  2. Season the Chicken and Potatoes: Generously season the chicken thighs with salt, pepper, and your choice of herbs. Toss the halved potatoes with olive oil, salt, and pepper, coating each piece well to help them roast evenly and develop a golden crust.
  3. Sear the Chicken: Heat butter and olive oil together in a large, ovenproof skillet over medium-high heat. Place the chicken thighs skin-side down in the hot pan. Sear for 5–7 minutes until the skin is golden brown and crisp. Flip the chicken and cook the other side briefly before removing it from the skillet.
  4. Roast Everything Together: Add the seasoned potatoes to the skillet, nestle the seared chicken thighs on top, then sprinkle the minced garlic and fresh herbs over everything. Spoon additional butter over the dish for extra richness. Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 25–30 minutes, or until the chicken is cooked through and the potatoes are tender.
  5. Finish with Lemon and Serve: Remove the skillet from the oven and drizzle fresh lemon juice over the chicken and potatoes to brighten the flavors. Let the dish rest for a few minutes to retain moisture, then serve hot as a comforting and flavorful meal.
