Ingredients

Biscuits

  • Flaky, buttery biscuits (homemade or store-bought) – about 8 biscuits
  • Flour (for homemade biscuits) – 2 cups
  • Baking powder (for homemade biscuits) – 1 tablespoon
  • Salt (for homemade biscuits) – 1 teaspoon plus extra for seasoning beef
  • Cold butter (for homemade biscuits) – 1/2 cup (1 stick), cut into pieces
  • Milk (for homemade biscuits) – 3/4 cup
  • Butter (for assembling and brushing) – 2 tablespoons, melted

Roast Beef

  • Thin-sliced roast beef – 1 pound
  • Salt – 1/2 teaspoon
  • Black pepper – 1/2 teaspoon
  • Garlic powder – 1/2 teaspoon

Beef Au Jus

  • Beef broth – 2 cups
  • Garlic cloves, minced – 2
  • Onion, finely chopped – 1 small
  • Fresh thyme or rosemary sprigs – 2
  • Salt and pepper to taste

Instructions

  1. Prepare the Biscuits: If making homemade biscuits, mix flour, baking powder, and salt in a bowl. Cut in cold butter until the mixture is crumbly, then add milk and gently knead to form dough. Roll out the dough and cut into rounds. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes until golden and flaky. For store-bought biscuits, warm according to package instructions for best results.
  2. Slice and Season Roast Beef: Take thinly sliced roast beef and season lightly with salt, black pepper, and garlic powder to enhance natural flavors without overpowering.
  3. Make Beef Au Jus: In a small saucepan, combine beef broth with minced garlic, chopped onions, and fresh thyme or rosemary. Simmer gently over medium-low heat for about 20 minutes to infuse the broth with savory aromas and concentrate flavors. Season with salt and pepper to taste.
  4. Assemble the Biscuits: Slice the warm biscuits in half. Layer each with seasoned roast beef and a pat of butter. Close the biscuits and optionally brush the tops with melted butter to add extra crispiness.
  5. Serve with Au Jus: Bring everything to the table accompanied by small bowls of steaming hot au jus for dipping. Dip each sandwich bite into the flavorful sauce for a juicy, interactive eating experience.

Notes

  • Choose quality roast beef with good marbling for optimal tenderness and flavor.
  • Prepare au jus ahead of time to allow flavors to meld and deepen.
  • Avoid overfilling biscuits to prevent sogginess and to keep sandwiches manageable.
  • Squeeze biscuits tightly while eating to capture the perfect crunchy and juicy balance.
  • Use fresh herbs like thyme or rosemary in the au jus to elevate the flavor profile.
