Ingredients

Scale

Protein

  • 1 lb ground pork, chicken, or turkey

Vegetables

  • 2 cups shredded cabbage
  • 1 cup grated carrots
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced

Sauce

  • 3 tbsp soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp brown sugar or honey
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Prepare the Ingredients: Wash and shred the cabbage and carrots, slice the green onions, and mince the garlic and ginger to have everything ready before cooking.
  2. Cook the Protein: Heat a large skillet or wok over medium heat. Add the ground meat and cook until browned and fully cooked, breaking it apart into crumbles as it cooks.
  3. Sauté Aromatics and Vegetables: Add the minced garlic and ginger to the skillet with the cooked meat, cooking until fragrant. Then add the shredded cabbage and grated carrots, stirring frequently until the vegetables are tender-crisp.
  4. Mix in the Sauce: Whisk together the soy sauce, sesame oil, rice vinegar, brown sugar, and optional red pepper flakes. Pour this mixture over the meat and vegetables, stirring well and letting the flavors meld for a few minutes.
  5. Finish with Green Onions and Serve: Sprinkle the sliced green onions on top for freshness, stir once more, and serve warm with your choice of sides or toppings.

Notes

  • Drain Excess Liquid: If cabbage releases too much moisture, drain some liquid to avoid sogginess.
  • Use High Heat: Cooking on medium-high heat helps keep veggies crisp and meat browned.
  • Don’t Skip Fresh Aromatics: Garlic, ginger, and green onions add essential flavor.
  • Adjust Seasonings Last: Taste and tweak saltiness, sweetness, or acidity after combining all ingredients.
  • Use a Wide Pan: A large skillet or wok ensures even cooking and prevents overcrowding.
