Ingredients

Scale

Base

  • 2 cups sushi rice (uncooked)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

Filling

  • 8 oz imitation crab meat or real crab meat, shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha or spicy mayo (adjust to taste)

Toppings & Garnishes

  • 1/4 cup sesame seeds
  • 2 green onions, thinly sliced
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • Nori sheets or seaweed snacks
  • Soy sauce (or tamari for gluten-free option) for serving

Instructions

  1. Prepare the Rice: Cook sushi rice according to package instructions. While still warm, season the rice with a mixture of rice vinegar, sugar, and salt, stirring gently to incorporate and achieve the signature slightly tangy, sweet flavor.
  2. Mix the Crab Filling: In a bowl, combine the shredded imitation crab or real crab meat with mayonnaise and sriracha. Adjust the sriracha quantity depending on your preferred level of spiciness, mixing until well combined and creamy.
  3. Layer the Bake: Spread the seasoned sushi rice evenly in a baking dish to create the base layer. Evenly spread the crab mixture on top, then sprinkle sesame seeds and chopped green onions over the surface for added flavor and texture.
  4. Bake It: Preheat your oven to 350°F (175°C). Place the baking dish in the oven and bake for 15-20 minutes, or until the top is golden and bubbly, allowing flavors to meld and the dish to warm through.
  5. Assemble and Serve: Let the sushi bake cool slightly after baking. Cut into squares and serve alongside nori sheets, cucumber slices, and avocado. Use soy sauce for dipping to build your own sushi bites.

Notes

  • Use high-quality short-grain sushi rice for the best sticky texture.
  • Properly season the rice to ensure authentic sushi flavor.
  • Spread ingredients evenly for balanced flavor in every bite.
  • Adjust sriracha gradually to avoid overpowering the seafood taste.
  • Include fresh avocado and cucumber for a refreshing contrast to the creamy baked filling.
  • For gluten-free option, substitute soy sauce with tamari.
  • Make it dairy-free by using vegan or dairy-free mayonnaise.
  • Store leftovers in airtight container in the refrigerator for up to 3 days.
  • Freeze portions wrapped tightly for up to one month; texture may soften slightly after thawing.
  • Reheat in microwave or oven at 350°F (175°C) for 10 minutes to restore texture.
