Ingredients

Scale

Main Ingredients

  • 1 (5 oz) can high-quality tuna packed in water, drained
  • 1/2 cup breadcrumbs (or gluten-free cracker crumbs/almond flour for gluten-free option)
  • 1 large egg
  • 2 tablespoons spicy mayo or sriracha (adjust to taste)
  • 3 green onions, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons neutral oil (canola or vegetable) for frying

Optional Variations

  • 1 diced jalapeño or 1/4 teaspoon cayenne pepper for extra heat
  • 2 tablespoons chopped fresh herbs (cilantro, parsley, or dill)
  • 1/4 cup shredded cheddar or pepper jack cheese
  • 1/2 cup crushed pork rinds for low-carb binding substitute

Instructions

  1. Prepare the Tuna Mixture: Drain the canned tuna well and place it into a large mixing bowl. Add the breadcrumbs, egg, green onions, spicy mayo or sriracha, lemon juice, salt, pepper, and garlic powder. Mix gently but thoroughly until all ingredients are combined, ensuring not to overmix or make the mixture too dense.
  2. Shape Your Tuna Cakes: Using your hands or a spoon, form the mixture into small, even-sized patties about 2 to 3 inches wide. Arrange the patties on a plate and chill them in the refrigerator for 15 minutes to help hold their shape.
  3. Heat the Pan and Cook: Drizzle oil generously in a non-stick skillet and heat over medium heat. Once hot, carefully add the tuna cakes without overcrowding the pan. Cook for 3 to 4 minutes on each side or until they are golden brown and crispy.
  4. Drain and Serve: Transfer the cooked tuna cakes onto a paper towel-lined plate to absorb excess oil. Serve warm with your choice of garnishes like sour cream, fresh cilantro, or lime juice and preferred side dishes.

Notes

  • Use Dry Tuna: Ensure the tuna is thoroughly drained to prevent soggy cakes.
  • Don’t Overmix: Mix lightly to keep the mixture tender and fluffy.
  • Chill the Mixture: Refrigerate patties before cooking to help them hold together better.
  • Test Fry: Cook a small patty first to adjust seasoning and spice levels as needed.
  • Oil Temperature: Maintain medium heat to achieve a crisp, golden crust without burning.
