Ingredients

Scale

Fruits

  • 2 ripe mangoes, peeled and diced (plus extra slices for garnish)

Main Ingredients

  • 1/2 cup sago pearls
  • 1 cup coconut milk
  • 2 tablespoons sugar or preferred sweetener (adjust to taste)
  • 4 cups water (for boiling sago pearls)

Optional Ingredients

  • Ice cubes, for serving chilled
  • Fresh mint leaves, for garnish
  • Chia seeds (for added texture and nutrition)
  • Toasted coconut flakes (for garnish)

Instructions

  1. Prepare the sago pearls: Boil 4 cups of water in a pot and add the sago pearls. Stir gently to prevent sticking. Cook for 10-15 minutes until the pearls become translucent with a small white dot in the center. Drain the sago and rinse under cold water to remove excess starch and cool them down.
  2. Prepare the mangoes: While the sago is cooking, peel and dice the mangoes into bite-sized pieces. Reserve a few slices for garnish if desired.
  3. Mix the coconut milk base: In a mixing bowl, combine coconut milk with sugar or your preferred sweetener. Stir until fully dissolved and adjust sweetness to taste.
  4. Combine ingredients: Add the cooked sago pearls to the coconut milk mixture. Gently fold in the diced mangoes, mixing carefully to distribute the fruit and pearls evenly without breaking them.
  5. Chill and serve: Refrigerate the dessert for at least one hour to enhance flavors and texture, or serve immediately with ice cubes for a refreshing chill. Garnish with reserved mango slices, fresh mint leaves, or toasted coconut flakes.

Notes

  • Stir sago frequently during cooking to avoid clumping and ensure even texture.
  • Use ripe mangoes for a naturally sweet and juicy dessert.
  • Rinse sago pearls under cold water immediately after cooking to prevent overcooking and gummy texture.
  • Adjust the sweetness after tasting, as ripe mangoes may reduce the need for additional sugar.
  • Serve chilled for the best flavor and refreshing effect.
