Instructions

  1. Prepare the Dough: In a large bowl, combine warm water, sugar, and instant yeast. Let sit for about 5 minutes until frothy, indicating the yeast is active. Stir in olive oil, minced garlic, and chopped fresh rosemary.
  2. Mix in the Flour: Gradually add the all-purpose flour and sea salt to the wet ingredients. Stir with a wooden spoon or dough hook until combined. Knead by hand or mixer for 5-7 minutes until the dough is smooth, elastic, and slightly tacky; add flour if too sticky.
  3. First Rise: Place the dough in a greased bowl, cover with a kitchen towel, and let rise in a warm spot for about 1 hour or until doubled in size.
  4. Shape the Muffins: Gently punch down the risen dough to release air. Divide the dough evenly into a greased or lined muffin tin, filling each cup about 2/3 full. Dimple the dough with your fingers, drizzle with olive oil, then sprinkle extra rosemary and coarse sea salt on top.
