Ingredients

Scale

Cake Ingredients

  • 1 Yellow Cake Mix
  • 3 Eggs
  • 1/2 cup Vegetable Oil
  • 1 cup Water

Pudding Filling

  • 2 packs Instant Pudding Mix (3.4 oz each, vanilla or preferred flavor)
  • 4 cups Milk
  • Food Coloring (pastel shades: pink, blue, yellow, green, etc.)

Frosting & Decoration

  • 1 tub Whipped Topping (8 oz)
  • Pastel Sprinkles or edible decorations (optional)

Instructions

  1. Bake the Cake: Prepare the yellow cake batter by combining the cake mix with eggs, oil, and water according to the package directions. Pour the batter into a greased 9×13 inch baking pan and bake until a toothpick inserted into the center comes out clean. Let the cake cool completely before proceeding.
  2. Prepare the Pudding: Whisk together the instant pudding mix and milk until smooth. Allow it to set for a few minutes until thickened. Divide the pudding evenly into several small bowls and tint each with different pastel food coloring shades to create a colorful Easter palette.
  3. Poke the Cake: Using the handle of a wooden spoon or skewer, poke evenly spaced holes all over the cooled cake about two-thirds through its depth. This allows the pudding to soak deep inside for added moisture and flavor.
  4. Pour the Pudding: Spoon or pour the different colored puddings into the holes in the cake, creating a lovely mosaic effect of pastel colors as the pudding seeps into the cake.
  5. Chill and Frost: Refrigerate the cake for at least 1 hour so the pudding can fully set inside. After chilling, spread a generous layer of whipped topping evenly over the entire cake for a light and creamy finish.
  6. Add Sprinkles and Serve: Decorate the cake with pastel sprinkles or any Easter-themed edible decorations you prefer. Slice and enjoy your festive Easter Pastel Poke Cake!

Notes

  • Make sure the cake is completely cooled before poking and adding pudding to prevent it from crumbling.
  • Space holes evenly to ensure pudding is evenly distributed throughout the cake.
  • Use gel food coloring for vibrant pastel colors without thinning the pudding.
  • Chill the cake well to allow flavors to meld and the pudding to set properly.
  • For best texture, use freshly whipped cream or high-quality store-bought whipped topping.
