Instructions

  1. Prepare the Dates: Pit the Medjool dates and soak them in warm water for 10 minutes if they are dry. This softens the dates to help them blend smoothly and stick well with the other ingredients.
  2. Process the Peanut Filling: Pulse the raw peanuts in a food processor until chunky but not powdery to maintain a Snickers-like crunch. Combine the peanuts with almond butter, vanilla extract, and a pinch of sea salt to form a sticky, flavorful filling.
  3. Assemble the Bars: Line a tray with parchment paper. Press a thick layer of the sticky date paste onto the tray, then evenly spread the peanut mixture on top. Chill the layered assembly in the refrigerator for 15 minutes to firm up.
  4. Coat with Chocolate: Melt the dark chocolate chips using a double boiler or microwave in short bursts until smooth. Pour the melted chocolate over the chilled bars and spread evenly. Refrigerate for at least 30 minutes to allow the chocolate to set.
