Instructions

  1. Prepare the Pork Loin: Trim any excess fat from your pork loin, then pat it dry with paper towels. This helps the seasonings stick better and ensures even cooking.
  2. Mix the Sauce: In a bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, onion powder, and red pepper flakes if using. Whisk until the sugar dissolves and the ingredients are well incorporated—this sauce will create a beautiful glaze.
  3. Layer Ingredients in the Crock Pot: Place a layer of pineapple chunks at the bottom of the crock pot to create a natural rack that infuses flavor. Nestle the pork loin on top and pour the sauce evenly over it. Scatter remaining pineapple chunks around the pork to keep juicy bites close by.
