Ingredients

Scale

Potatoes

  • 2 lbs Yukon Gold or waxy/all-purpose potatoes, peeled and cut into wedges or chunks

Marinade

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, freshly minced
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste

Optional

  • 1/4 cup vegetable or chicken broth (for moist roasting)

Instructions

  1. Preheat Your Oven and Prepare Potatoes: Heat your oven to 425°F (220°C). Peel the potatoes and cut into evenly sized wedges or chunks to ensure even cooking and optimal crispiness.
  2. Parboil the Potatoes: Place the chopped potatoes in boiling salted water for 8–10 minutes until just tender but not falling apart. This softens the inside and prepares the potatoes for a crispy exterior.
  3. Drain and Rough Up the Surface: Drain the potatoes well and return them to the pot. Give them a gentle shake to roughen the surfaces, creating nooks that trap flavor and crispiness.
  4. Mix the Marinade: In a large bowl, combine olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper. This mixture will coat the potatoes with a vibrant Mediterranean flavor.
  5. Toss Potatoes in Marinade and Arrange in Baking Dish: Carefully toss the potatoes in the marinade until all pieces are evenly coated. Transfer them in a single layer to a deep baking dish or roasting pan. Optionally, pour broth around the edges for moist roasting.
  6. Roast Until Golden and Crisp: Roast in the preheated oven for 45–50 minutes, turning once or twice to ensure even browning. They are done when edges are golden and crispy and interiors are fluffy.

Notes

  • Use waxy or all-purpose potatoes like Yukon Gold for the best texture.
  • Parboiling is essential to soften the inside and achieve crispy edges.
  • Roughing up the potatoes after parboiling helps develop more crispy surfaces.
  • Do not skimp on olive oil; it is key for flavor and crunch.
  • Allow the potatoes time to roast undisturbed before flipping to prevent sticking or breaking.
  • Adding broth in the pan keeps the insides tender while roasting.
  • Sprinkle fresh herbs like oregano or parsley after roasting for extra aroma.
  • Leftovers keep well refrigerated for up to 3 days and reheat best in the oven for crispiness.
  • For a vegan version, use vegetable broth and avoid dairy toppings.
