Ingredients

Scale

Seafood Filling

  • 1 cup fresh lump or claw crab meat, chopped
  • 1 cup small cooked, shelled shrimp, chopped
  • 1 cup shredded queso blanco or Monterey Jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, finely chopped

Taquito Assembly

  • 1012 corn or flour tortillas (soft yet sturdy)
  • Cooking oil (for frying, about 2 cups) or cooking spray (for baking)

Instructions

  1. Prepare the Seafood Filling: Chop the fresh crab meat and cooked shrimp into manageable pieces. In a mixing bowl, combine the seafood with shredded queso, garlic powder, cumin, chili powder, lime juice, and freshly chopped cilantro. Mix gently to blend all flavors evenly.
  2. Assemble the Taquitos: Warm the tortillas slightly to make them pliable. Spoon a generous amount of the seafood and cheese mixture onto one edge of each tortilla. Roll tightly to seal the filling inside, securing with a toothpick if necessary.
  3. Cook Until Golden and Crispy: To fry: Heat oil in a deep skillet over medium-high heat. Place the rolled taquitos seam-side down into the hot oil and fry for 2-3 minutes per side until golden and crispy. Drain on paper towels to remove excess oil. To bake: Preheat oven to 425°F (220°C). Place taquitos seam-side down on a lined baking sheet, lightly spray with cooking spray, and bake for 15-20 minutes, flipping halfway through until crisp and golden.
  4. Serve Warm with Favorite Dips: Plate the taquitos immediately to enjoy the contrast of hot, melty filling with crispy tortilla shells. Serve alongside guacamole, salsa, sour cream, or lime crema for a complete and flavorful experience.

Notes

  • Use the freshest seafood possible for optimal flavor and texture.
  • Do not overfill the tortillas to prevent bursting and ensure even crispiness.
  • Warm tortillas before rolling to prevent cracking and ease shaping.
  • Maintain medium-high oil temperature while frying to cook quickly with minimal oil absorption.
  • Drain fried taquitos on paper towels to keep them crisp.
  • Serve immediately after cooking to preserve the signature crunch.
