Instructions

  1. Prepare the chicken: Season the chicken breasts generously with salt and pepper. Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken breasts for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté the mushrooms and garlic: In the same skillet, add additional butter if needed. Add the sliced mushrooms and cook for 5-7 minutes until they release their juices and turn golden brown. Add the minced garlic and sauté for another minute, being careful not to burn the garlic.
  3. Build the creamy Asiago sauce: Pour in the chicken broth, scraping the bottom of the skillet to loosen browned bits. Stir in the heavy cream and bring to a gentle simmer. Gradually add the freshly grated Asiago cheese, stirring until melted and the sauce thickens to a smooth consistency.
  4. Combine and finish cooking: Return the seared chicken breasts to the skillet, nestling them into the creamy mushroom Asiago sauce. Allow everything to simmer together for 2-3 minutes to meld the flavors and heat the chicken through. Adjust seasoning with salt, pepper, and fresh herbs if desired.
