Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper. Heat 1 tablespoon of olive oil or butter in a large skillet over medium-high heat. Sear the chicken breasts until golden brown on each side, about 4-5 minutes per side. Remove from skillet and set aside to rest.
  2. Sauté the Aromatics and Mushrooms: In the same skillet, add the remaining oil or butter if needed. Add minced garlic and finely chopped shallots (or onions), sautéing for 1-2 minutes until fragrant. Add the sliced mushrooms and cook for 5-7 minutes until they release their juices and turn golden brown.
  3. Build the Dijon Cream Sauce: Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Stir in Dijon mustard and heavy cream, mixing until the sauce is smooth and begins to thicken, about 3-5 minutes. Adjust seasoning with salt and pepper to taste.
  4. Combine and Finish Cooking: Return the chicken breasts to the skillet, nestling them into the sauce. Lower the heat and simmer gently for 5-10 minutes until the chicken is cooked through and tender. Garnish with chopped fresh parsley or thyme just before serving.
