Instructions

  1. Prepare the Chicken: Season the chicken pieces lightly with salt, pepper, and 1 teaspoon of paprika. Heat butter and olive oil in a large skillet over medium heat, then add the chicken. Cook until golden brown on all sides but do not cook through completely; the chicken will finish cooking later in the sauce.
  2. Sauté Onions, Garlic, and Mushrooms: In the same skillet, add a bit more butter if needed and sauté the onions until translucent and softened. Add minced garlic and sliced mushrooms, cooking until the mushrooms release their moisture and begin to brown. This creates the flavor base for the sauce.
  3. Add Paprika and Flour: Sprinkle the remaining teaspoon of sweet paprika over the sautéed vegetables and stir to coat evenly. Then sprinkle in the flour or cornstarch and cook for 1 minute to eliminate the raw flour taste and help thicken the sauce.
  4. Deglaze with Broth and Simmer: Pour in the chicken broth slowly while scraping the bottom of the pan to lift browned bits. Bring the mixture to a gentle simmer, allowing the sauce to thicken slightly as the chicken finishes cooking in the flavorful liquid.
