  • Black pepper, to taste

Mushrooms & Aromatics

  • 8 oz button or cremini mushrooms, sliced
  • 2 cloves garlic, minced

Sauce

  • 2 tablespoons olive oil
  • 1 tablespoon butter, plus more as needed
  • 1 tablespoon Dijon mustard
  • ¾ cup heavy cream
  • ½ cup freshly grated Asiago cheese

Finishing

  • 2 tablespoons fresh parsley or thyme, chopped

Instructions

  1. Prepare and Season the Chicken: Pat the chicken breasts dry, then season both sides generously with salt and black pepper to ensure a flavorful crust when seared.
  2. Sear the Chicken: Heat olive oil and a bit of butter in a large skillet over medium-high heat. Add the chicken and cook for about 5 minutes per side until golden brown and cooked through. Remove the chicken and set aside to rest.
  3. Sauté the Mushrooms and Garlic: In the same skillet, add more butter if needed and toss in the sliced mushrooms. Cook until browned and moisture evaporates, about 6-8 minutes. Add minced garlic in the last minute and sauté until fragrant.
  4. Make the Creamy Asiago & Mustard Sauce: Lower the heat, stir in Dijon mustard, then add heavy cream and grated Asiago cheese. Stir continuously until the cheese melts and the sauce is smooth and slightly thickened.
  5. Combine and Simmer: Return the chicken breasts to the skillet, nestle them into the sauce. Let simmer together for a couple of minutes so the flavors meld and the chicken warms through.
  6. Finish with Fresh Herbs: Sprinkle freshly chopped parsley or thyme on top before serving for color and fresh aroma.
