Filling Ingredients

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits
  • 1/4 cup chopped green onions
  • 1 tablespoon ranch seasoning mix

Assembly

  • 4 large flour tortillas

Instructions

  1. Prepare the Filling: In a medium bowl, combine shredded chicken, softened cream cheese, shredded cheddar cheese, bacon bits, chopped green onions, and ranch seasoning mix. Mix well until creamy and evenly combined.
  2. Spread the Mixture: Lay out the flour tortillas flat on a clean surface. Evenly spread the cheesy chicken mixture over each tortilla, leaving a small border around the edges to make rolling easier.
  3. Roll and Chill: Carefully roll each tortilla tightly into a log shape. Wrap each log tightly in plastic wrap and refrigerate for at least 30 minutes to firm up the filling for clean slicing.
  4. Slice Into Pinwheels: Remove the chilled rolls from the refrigerator and unwrap. Using a sharp knife, slice each roll into 1-inch thick pinwheels.
  5. Bake to Perfection: Place the pinwheels on a baking sheet lined with parchment paper, spacing them slightly apart. Bake in a preheated oven at 375°F (190°C) for 12–15 minutes, or until golden, bubbly, and slightly crispy around the edges.

Notes

  • Use cold, softened cream cheese to prevent the filling from becoming too runny and to achieve the best texture.
  • Avoid overfilling the tortillas; keep the filling spread thin to prevent cracking while rolling.
  • Chilling the rolled tortillas before slicing helps maintain neat, intact pinwheel shapes.
  • Adjust the baking time according to your oven to reach your preferred level of crispiness.
  • Use a sharp knife for clean, beautiful slices that hold together well.
