Ingredients

Scale

For the Crust

  • 1 cup cookie butter
  • 1 cup graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • Pinch of salt

For the Cheesecake Filling

  • 16 ounces cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • Pinch of salt

For the Topping

  • 3/4 cup caramel sauce, warmed
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Prepare the crust: Preheat your oven to 325°F (163°C). In a bowl, combine cookie butter, graham cracker crumbs, melted unsalted butter, and a pinch of salt. Mix until well incorporated, then press the mixture evenly into a parchment-lined 8×8 inch baking pan, creating a firm, even base.
  2. Make the cheesecake filling: In a mixing bowl, beat softened cream cheese and sugar together until smooth and fluffy. Add eggs one at a time, beating gently after each addition. Mix in vanilla extract and a pinch of salt just until combined, taking care not to overmix.
  3. Layer and bake: Pour the cheesecake filling evenly over the prepared crust. Bake in the preheated oven for 35-40 minutes, or until the edges are set but the center still jiggles slightly when shaken.
  4. Add caramel topping: Remove from the oven and allow to cool slightly. Pour warm caramel sauce evenly over the top of the cheesecake layer and spread gently with a spatula. Let it soak in as it cools.
  5. Chill and cut: Refrigerate the bars for at least 4 hours or overnight to ensure they set completely. Use the parchment overhang to lift the bars out of the pan and cut into clean squares before serving.

Notes

  • Allow cream cheese and eggs to come to room temperature for a smooth batter.
  • Mix cheesecake filling just until combined to avoid a dense texture.
  • Use high-quality caramel sauce or make your own for best results.
  • Line the pan with parchment paper with overhangs to easily lift the bars out.
  • Chill thoroughly before slicing to ensure clean, neat cuts.
  • You can customize with nuts, chocolate, spices, or fruit toppings as desired.
  • Store leftovers refrigerated in an airtight container for 4-5 days or freeze individual bars for up to 2 months.
