  • Parmesan cheese (1/2 cup, freshly grated)
  • Butter (2 tbsp)

  • Chicken broth (2 1/2 cups, warm)

Instructions

  1. Prepare the chicken: Season the chicken breasts or thighs with salt and pepper. Heat a skillet over medium heat and cook the chicken until browned and cooked through, about 5-7 minutes per side depending on thickness. Remove from skillet and let rest before cutting into bite-sized pieces.
  2. Cook the garlic and rice: In the same skillet, add butter and a splash of olive oil. Sauté the minced garlic until fragrant but not browned, about 1 minute. Add the uncooked rice and stir to coat it evenly in the garlic butter mixture. Slowly pour in warm chicken broth, bring to a simmer, then cover and cook until the rice is tender and the broth is absorbed, about 15-18 minutes.
  3. Add corn and parmesan: Stir in the corn kernels and freshly grated parmesan cheese while the rice is still warm, allowing the cheese to melt and create a creamy texture. Adjust seasoning with salt and pepper to taste.
  4. Combine and serve: Fold the sliced chicken pieces back into the rice mixture gently to combine all the flavors. Finish with a sprinkle of fresh chopped parsley or herbs, then serve hot in your favorite bowl.

  • Use warm chicken broth to help the rice cook evenly and absorb maximum flavor.
