Ingredients

Scale

Brownie Batter Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Cookie Dough Center Ingredients

  • 1/4 cup butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (heat-treated for safety, or gluten-free flour blend)
  • 1/2 cup chocolate chips
  • Pinch of salt

Instructions

  1. Prepare the Brownie Batter: Start by melting 1/2 cup butter. In a bowl, mix the melted butter with 3/4 cup sugar, unsweetened cocoa powder, 2 large eggs, and 1 teaspoon vanilla extract until smooth. Gradually add 3/4 cup flour and 1/4 teaspoon salt. Finally, fold in 1/2 cup chocolate chips to distribute pockets of melty chocolate in every bite.
  2. Make the Cookie Dough Center: In a separate bowl, cream together 1/4 cup butter, 1/4 cup sugar, and 1/4 cup brown sugar. Add 1 teaspoon vanilla extract and stir to combine. Carefully fold in 1/2 cup flour (heat-treated or gluten-free) and 1/2 cup chocolate chips. Be gentle to avoid overmixing; the dough should be soft and slightly crumbly.
  3. Assemble the Bombs: Grease a muffin tin or line with paper liners. Spoon a layer of brownie batter at the bottom of each cup. Take a spoonful of cookie dough and place it in the center. Cover the cookie dough with more brownie batter until the cup is nearly full.
  4. Bake to Perfection: Bake in a preheated oven at 350°F (175°C) for 15-18 minutes. Bake until the brownie edges are set but the center remains gooey. Allow to cool slightly before removing from the tin to keep the molten center intact.

Notes

  • Use room temperature eggs for better batter incorporation and even texture.
  • Don’t overbake the brownies to ensure a fudgy and soft bite that pairs perfectly with the cookie dough center.
  • Chill the cookie dough before assembling to make it easier to scoop and maintain shape during baking.
  • Line muffin tins with paper liners or grease well to prevent sticking and aid in easy removal.
  • Customize with your favorite type of chocolate chips: dark, milk, or white chocolate.
