Ingredients

Scale

Brownie Base:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup (90g) mini chocolate chips

Cookie Dough Topping:

  • 1/4 cup (57g) unsalted butter, softened
  • 1/4 cup (50g) packed brown sugar
  • 1/2 cup (65g) heat-treated all-purpose flour
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 1/3 cup (55g) mini chocolate chips

Instructions

  1. Prepare the Brownie Batter: Melt the butter and mix it with granulated sugar until smooth and glossy. Beat in the eggs one at a time and stir in the vanilla extract. Gradually add cocoa powder, flour, and salt, mixing until combined to form a dense, fudgy batter. Fold in mini chocolate chips gently.
  2. Prepare the Cookie Dough Topping: In a separate bowl, cream the softened butter with brown sugar until smooth. Mix in the heat-treated flour and a pinch of salt. Add vanilla extract and blend well. Fold in mini chocolate chips. The dough should be thick enough to hold its shape.
  3. Assemble the Bites: Line a mini muffin pan with liners. Spoon brownie batter into each cup halfway. Add a small dollop of cookie dough onto each brownie portion and gently spread slightly without mixing the layers.
  4. Bake to Perfection: Bake at 350°F (175°C) for 15-18 minutes or until the brownie centers are set but still soft and gooey. The cookie dough topping will bake slightly but remain soft.
  5. Cool and Serve: Allow the brownie bites to cool in the pan before carefully removing. Serve slightly warmed to enhance the gooey texture and rich flavors.

Notes

  • Heat-treat your flour before using it in the cookie dough to make it safe for raw consumption.
  • Don’t overbake; remove bites when centers are slightly undercooked—they will firm up while cooling.
  • Use mini muffin pans to ensure perfectly sized bites and even baking.
  • Use room temperature ingredients for smoother batter and dough.
  • If the cookie dough is too soft to shape, chill it briefly before assembling.
