Ingredients

Scale

Protein

  • 2 cups cooked chicken, shredded or cubed

Pasta

  • 8 ounces medium pasta such as penne or rotini

Vegetables

  • 1/2 cup peas
  • 1/2 cup diced carrots
  • 1/2 cup corn kernels
  • 1/2 cup diced onions

Cream Sauce

  • 4 tablespoons butter
  • 1/4 cup all-purpose flour (or cornstarch for gluten-free)
  • 2 cups milk (or coconut milk for dairy-free)
  • 1 cup chicken broth

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Optional

  • 1/2 cup shredded cheddar cheese

Instructions

  1. Cook the Pasta: Boil your choice of pasta in salted water until al dente. Drain and set aside while preparing the sauce and filling.
  2. Prepare the Vegetables and Chicken: In a large skillet or saucepan, sauté diced onions, carrots, and peas in butter until soft and fragrant. Add shredded cooked chicken and stir until everything is heated through.
  3. Make the Creamy Sauce: In the same pan, melt butter and whisk in the flour to create a roux. Slowly add milk and chicken broth while whisking continuously until the mixture thickens into a smooth, creamy sauce.
  4. Combine Pasta and Sauce: Add the cooked pasta back into the skillet and toss with the creamy chicken and vegetable mixture until every piece is coated with the sauce.
  5. Season and Serve: Finish with salt, pepper, and thyme. Optionally, sprinkle shredded cheese on top and allow it to melt before serving warm and comforting Chicken Pot Pie Pasta.

Notes

  • Use rotisserie chicken for extra convenience and roasted flavor.
  • Do not overcook pasta; al dente texture works best with the sauce.
  • Whisk butter and flour thoroughly to avoid lumps in the roux.
  • Frozen peas and carrots can be used without sacrificing flavor.
  • Let the dish rest for a few minutes before serving to thicken the sauce and meld flavors.
