Chicken Filling

  • 1 lb chicken breast, sliced into thin strips
  • 2 tbsp fajita seasoning (paprika, cumin, garlic powder, chili powder blend)
  • 1 tbsp olive oil (for cooking chicken)

Vegetables

  • 1 each red, green, and yellow bell peppers, sliced
  • 1 medium onion, sliced
  • 1 tbsp olive oil (for sautéing vegetables)

Assembly

  • 4 large flour tortillas
  • 1 ½ cups shredded cheese (Monterey Jack or cheddar)
  • 1 tbsp fresh lime juice

  • Sour cream
  • Guacamole
  • Salsa

Instructions

  1. Prepare the Chicken: Slice the chicken into thin strips and toss with the fajita seasoning. Heat olive oil in a skillet over medium heat and cook the chicken for 6-8 minutes until fully cooked and browned. Remove from skillet and set aside.
  2. Sauté the Vegetables: In the same skillet, add more olive oil if needed and sauté sliced bell peppers and onions for about 5 minutes until softened and slightly caramelized, stirring occasionally.
  3. Assemble the Quesadillas: Lay one tortilla flat, sprinkle cheese evenly on half of it, add cooked chicken, then sautéed peppers and onions. Top with more cheese and fold the tortilla over to cover the filling.
  4. Cook Until Golden: Place the folded quesadilla in a clean skillet over medium heat. Cook 3-4 minutes on each side, gently pressing, until tortilla is golden brown and cheese is fully melted.
  5. Serve and Enjoy: Remove from heat and let rest for one minute before slicing. Squeeze fresh lime juice over the top and serve with sour cream, guacamole, and salsa as desired.

  • Use warm tortillas for easier folding and even crisping.
  • Do not overload quesadillas to avoid tearing and ease flipping.
