Cheesy Sausage Biscuit Bites

Cheesy Sausage Biscuit Bites are flavorful bite-sized snacks combining savory ground sausage, sharp melted cheddar cheese, and tender refrigerated biscuit dough. Perfect as a quick breakfast, party appetizer, or tasty snack, these warm, cheesy morsels are easy to make, customizable, and satisfy cravings with every delicious bite.

Ingredients

Scale

Sausage Mixture

  • 1 pound ground sausage
  • Optional: 1/2 teaspoon garlic powder
  • Optional: 1/4 teaspoon black pepper
  • Optional: pinch of chili flakes
  • Optional variations: diced jalapeños, cayenne powder, fresh herbs (rosemary, thyme, parsley), or a teaspoon of maple syrup

Cheese

  • 1 to 1.5 cups sharp cheddar cheese, shredded or cut into small chunks
  • Alternative cheeses: mozzarella, pepper jack, smoked gouda (optional)

Biscuit Dough

  • 1 can (about 8 biscuits) refrigerated biscuit dough (or homemade biscuit dough for customization)

Finishing Touches

  • 2 tablespoons melted butter
  • Optional garnish: freshly chopped parsley or chives

Instructions

  1. Cook the Sausage: Brown the ground sausage in a skillet over medium heat until fully cooked and no longer pink. Break it into small pieces for even distribution. Drain excess grease to prevent sogginess.
  2. Prepare the Biscuit Dough: Open the refrigerated biscuit dough and separate each biscuit. Flatten each biscuit gently with your hands or a rolling pin to create a thicker base for the filling.
  3. Assemble the Bites: Place a spoonful of cooked sausage and a small chunk or sprinkle of shredded cheese in the center of each flattened biscuit. Fold the dough over the filling and pinch the edges tightly to seal the bites completely.
  4. Bake Until Golden: Arrange the sealed bites on a parchment-lined baking sheet. Brush the tops with melted butter to promote a golden, crispy crust. Bake in a preheated oven at 375°F (190°C) for 12-15 minutes until the bites are puffy and golden brown.
  5. Cool and Serve: Allow the Cheesy Sausage Biscuit Bites to cool for a few minutes before serving to let the flavors set and to avoid burning.

Notes

  • Don’t overfill the biscuits to avoid bursting or leaking during baking.
  • Seal the edges firmly by pinching and pressing to keep the filling inside.
  • Use sharp cheddar or other flavorful cheeses for best melting and taste.
  • If the dough feels tough after flattening, let it rest a few minutes for a softer texture.
  • Customize seasonings in the sausage mixture to suit your taste preferences.
