Instructions

  1. Prepare the Mashed Potatoes: Boil peeled and cut potatoes until fork-tender, about 15-20 minutes. Drain well and mash thoroughly with butter, milk or cream, minced or roasted garlic, salt, and pepper until smooth and creamy. Avoid overmixing to keep them fluffy.
  2. Mix in Cheeses and Binder: Fold freshly grated Parmesan and your choice of shredded cheese blend into the mashed potatoes. Add the beaten egg and mix gently to combine, helping the bites hold their shape when cooked.
  3. Shape the Bites: Use your hands or a small scoop to form the mixture into bite-sized balls. Arrange them on a platter to rest before coating.
  4. Coat with Breadcrumbs: Roll each potato bite in breadcrumbs, optionally mixed with dried herbs or garlic powder, to create a crispy outer crust.
  5. Cook Until Golden: Bake the bites in a preheated oven at 400°F (200°C) for 20-25 minutes, turning halfway through, or fry them in medium-heat oil until golden brown and crispy on the outside and heated through inside.
