Instructions

  1. Prepare the Chicken: Season the chicken breasts generously with salt, pepper, and Italian herbs. Heat olive oil or butter in a skillet over medium-high heat. Sear the chicken until golden brown on both sides and mostly cooked through, about 3-4 minutes per side. Remove from heat and set aside.
  2. Sauté the Vegetables: In the same skillet, add chopped garlic and onion and sauté until translucent, about 2-3 minutes. Add sliced mushrooms and cook until tender and slightly caramelized, about 5-6 minutes. Toss in the fresh spinach and cook just until wilted, about 1-2 minutes, allowing all flavors to blend.
  3. Make the Creamy Cheese Sauce: Reduce heat to low and stir in your choice of heavy cream or cream cheese until melted and smooth. Add the shredded mozzarella and cheddar cheese, stirring gently until you have a creamy, gooey sauce coating the vegetables.
  4. Assemble and Bake: Transfer the vegetable and cheese mixture to a baking dish. Place the seared chicken breasts on top and spoon additional cheese sauce over them. Sprinkle remaining shredded cheese evenly on the surface. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until bubbly and golden brown.
