Ingredients

Scale

Brownie Base

  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1/3 cup (35g) high-quality cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (65g) all-purpose flour (or almond flour for gluten-free option)

Cheesecake Filling

  • 16 oz (450g) full-fat cream cheese, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract

Caramel Sauce

  • 1/2 cup (120ml) homemade or store-bought caramel sauce

Instructions

  1. Prepare the Brownie Layer: Start by melting the butter and mixing it with sugar and cocoa powder until smooth. Beat in the eggs and vanilla extract, then gently fold in the flour. Spread this batter evenly into your prepared springform pan to create the brownie base.
  2. Make the Cheesecake Filling: Using a mixer, beat the softened cream cheese until smooth and creamy. Gradually add the sugar and eggs one at a time, ensuring each is fully combined. Stir in vanilla extract for added flavor.
  3. Layer and Swirl: Pour the cheesecake batter evenly over the brownie layer. Drizzle caramel sauce in thin lines across the top, then use a knife or skewer to swirl the caramel into the cheesecake, creating a beautiful marbled effect.
  4. Bake to Perfection: Bake the entire cheesecake at 325°F (160°C) until the edges are set but the center still slightly jiggles, about 50-60 minutes. This ensures a creamy texture without overbaking. Let cool completely before refrigerating.
  5. Chill and Serve: Refrigerate for at least 4 hours or overnight to allow flavors to meld and texture to firm up. Slice carefully with a warm knife for clean, neat pieces.

Notes

  • Use room temperature cream cheese and eggs for smooth mixing without lumps.
  • Do not overmix the cheesecake filling to avoid incorporating too much air which can cause cracks.
  • Use a water bath during baking to evenly distribute heat and reduce cracks.
  • For beautiful caramel swirls, alternate thin lines of caramel and swirl with a toothpick or skewer.
  • Cool cheesecake gradually to room temperature before refrigerating to prevent condensation and preserve texture.
