Ingredients

Chicken Wings

  • Fresh mid-joint chicken wings, quantity as desired

Peri Peri Sauce

  • Peri peri chili paste (amount to taste, approx. 2-3 tablespoons)
  • Fresh lemon juice, 2 tablespoons
  • Olive oil, 2 tablespoons
  • Fresh garlic or garlic powder, 1-2 cloves minced or 1 teaspoon garlic powder
  • Smoked paprika, ½ teaspoon

Buffalo Sauce

  • Hot sauce (classic Buffalo-style cayenne pepper sauce), ⅓ cup
  • Unsalted butter, 4 tablespoons

Seasonings and Others

  • Garlic powder, 1 teaspoon
  • Onion powder, 1 teaspoon
  • Salt, 1 teaspoon or to taste
  • Black pepper, ½ teaspoon or to taste
  • Olive oil, 1-2 tablespoons for coating wings

Instructions

  1. Prepare the Wings: Pat the chicken wings dry thoroughly using paper towels to ensure crispiness. Toss the wings in olive oil, garlic powder, onion powder, salt, and black pepper, making sure each piece is evenly coated.
  2. Roast to Perfection: Arrange the wings on a baking sheet lined with parchment paper or a wire rack to allow air circulation. Roast at 425°F (220°C) for 35-40 minutes, flipping halfway through, until wings are golden brown and crispy.
  3. Make the Peri Peri Sauce: In a blender or food processor, combine peri peri chili paste, fresh lemon juice, olive oil, garlic (fresh or powder), and smoked paprika. Blend until smooth. Warm the sauce gently over low heat in a saucepan to meld the flavors.
  4. Combine the Sauces: In a separate pan, melt the butter over low heat. Once melted, mix in the hot sauce to create the Buffalo sauce. Then, combine this with the peri peri sauce, stirring to blend the flavors evenly.
  5. Toss Wings in Sauce: When the wings are done roasting and crispy, transfer them to a large bowl. Pour the combined peri peri and Buffalo sauce over the wings and toss thoroughly to coat each wing in sauce evenly for full flavor.

Notes

  • Pat chicken wings dry before cooking for the crispiest skin.
  • Use a wire rack when roasting to allow even cooking and prevent sogginess.
  • Adjust peri peri sauce gradually to control heat intensity to your liking.
  • Prepare peri peri sauce a day ahead to deepen and intensify flavors.
  • Toss wings twice in sauce for an extra sticky and flavorful coating.
