Ganache

  • 8 oz (227g) dark chocolate, chopped
  • 3/4 cup (180ml) heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Topping

  • 1 to 1 1/2 cups fresh blueberries

Instructions

  1. Prepare the Tart Crust: Mix cold, cubed butter with flour, powdered sugar, and a pinch of salt until the mixture is crumbly. Press the dough evenly into a tart pan and chill in the refrigerator for 30 minutes to keep the crust crisp and flaky.
  2. Bake the Crust: Preheat oven to 350°F (175°C). Prick the chilled crust with a fork, line with parchment paper, and fill with pie weights or dried beans. Bake for 15 minutes, remove weights and parchment, then bake another 10 minutes until golden. Let the crust cool completely before filling.
  3. Make the Ganache: Heat heavy cream just until it simmers. Pour over chopped dark chocolate and let sit for a minute. Stir gently until smooth and glossy. Stir in vanilla extract and a pinch of salt to enhance flavor.
  4. Assemble the Tart: Pour the warm ganache into the cooled tart shell, smoothing the surface evenly. Scatter fresh blueberries on top, pressing them gently into the ganache so they set beautifully.
  5. Chill and Set: Refrigerate the tart for at least 2 hours or until the ganache is firm to the touch. This ensures clean slicing and a perfect presentation.
