Black Pepper Chicken with Mushrooms

Black Pepper Chicken with Mushrooms

A quick and flavorful dish combining tender chicken and earthy mushrooms with bold black pepper and a savory soy sauce, ready in just 30 minutes — perfect for busy weeknights or casual gatherings.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts or thighs, sliced into bite-sized strips

Vegetables

  • 8 oz fresh button or cremini mushrooms, cleaned and sliced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 2 green onions, chopped (for garnish)

Seasonings & Sauces

  • 12 teaspoons freshly ground black pepper
  • 3 tablespoons soy sauce (or low-sodium soy sauce)
  • 1 tablespoon olive oil or vegetable oil
  • 1/4 cup water or stock
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  1. Prepare Your Ingredients: Slice the chicken into bite-sized strips or cubes, clean and slice the mushrooms, mince the garlic, and slice the onion. Having everything ready upfront makes cooking a breeze.
  2. Sauté Aromatics: Heat oil in a hot skillet or wok over medium-high heat. Add sliced onions and garlic, cooking until fragrant and translucent to build the flavor base.
  3. Cook the Chicken: Add the chicken pieces to the pan and sauté for 6 to 8 minutes until golden and cooked through.
  4. Add Mushrooms and Black Pepper: Add the mushrooms and stir-fry with the chicken for a few minutes until mushrooms soften. Generously sprinkle freshly ground black pepper evenly over the mixture.
  5. Make the Sauce: Pour in the soy sauce and a splash of water or stock. Optionally, add the cornstarch slurry to thicken the sauce, stirring and letting it simmer until glossy and slightly thickened.
  6. Garnish and Serve: Turn off the heat and sprinkle chopped green onions on top for color and fresh flavor. Serve immediately.

Notes

  • Use fresh black pepper for the best aromatic flavor.
  • Do not overcrowd the pan; cook chicken in batches if necessary to avoid steaming and ensure a nice sear.
  • Pat mushrooms dry before cooking to prevent sogginess and maintain texture.
  • Adjust soy sauce and black pepper gradually to keep flavors balanced and avoid over-salting.
  • Serve hot for the best taste with silky, warm sauce.
