Ingredients

Scale

Wet Ingredients

  • 34 ripe bananas, mashed
  • 1/2 cup (115g) unsalted butter, melted (or substitute with oil or coconut oil for vegan)
  • 3/4 cup (150g) sugar (adjust to taste)
  • 2 large eggs (or flax eggs for vegan: 2 tbsp ground flaxseed + 6 tbsp water)
  • 1/3 cup (105g) Biscoff spread
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups (190g) all-purpose flour (can substitute with gluten-free flour blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Prepare Your Ingredients: Mash the ripe bananas until smooth. In a separate bowl, mix together flour, baking soda, cinnamon, nutmeg, and salt. Preheat oven to 350°F (175°C) and grease a loaf pan to prevent sticking.
  2. Mix the Wet Ingredients: In a large bowl, beat the melted butter and sugar until creamy. Add eggs one at a time, followed by vanilla extract and the Biscoff spread, mixing until fully incorporated.
  3. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Carefully fold in the mashed bananas to maintain the bread’s tender texture.
  4. Pour and Bake: Pour the batter into the prepared loaf pan, smoothing the surface. Bake for 55-65 minutes, testing with a toothpick— it should come out clean or with only a few moist crumbs.
  5. Cool and Enjoy: Allow the bread to cool in the pan for about 20 minutes before slicing. This lets the flavors meld and the texture set perfectly.

Notes

  • Use overripe bananas for maximum sweetness and moisture.
  • Do not overmix the batter to keep the bread fluffy and tender.
  • Measure flour accurately by spooning and leveling to avoid dryness.
  • Adjust sugar based on the sweetness of your bananas.
  • Use an oven thermometer to ensure proper baking temperature and avoid drying out the bread.
