Ingredients

Scale

Main Ingredients

  • 2 medium sweet potatoes, firm
  • 2 cups cooked chicken, shredded or chopped
  • 1/2 cup BBQ sauce (your favorite brand or homemade)
  • 1 tbsp olive oil
  • 2 green onions, sliced
  • 1/2 cup shredded sharp cheddar or Monterey Jack cheese
  • 1/4 cup sour cream or Greek yogurt
  • Salt and pepper to taste

Optional Variations

  • 12 diced jalapeños or a dash of hot sauce (for spicy kick)
  • 1 cup BBQ jackfruit or cooked beans (vegetarian substitute)
  • Alternative cheeses: smoked gouda, pepper jack
  • Extra veggies: 1/2 cup corn, black beans, or diced bell peppers
  • Low-sugar BBQ sauce and Greek yogurt (healthier swap)

Instructions

  1. Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly. Rub each with olive oil and sprinkle with salt and pepper. Pierce each potato several times with a fork. Bake at 400ºF (200ºC) for about 45 minutes until tender when pierced.
  2. Cook the Chicken: If not pre-cooked, season chicken breasts or thighs with salt and pepper and quickly sauté or roast until cooked through. Shred using two forks. Toss shredded chicken with BBQ sauce until well coated.
  3. Stuff the Sweet Potatoes: When sweet potatoes have cooled enough to handle, slice them lengthwise. Gently fluff the inside with a fork and stuff generously with the BBQ chicken mixture.
  4. Add Cheese and Bake: Top each stuffed potato with shredded cheese. Return to the oven for about 5 minutes, just until the cheese melts.
  5. Garnish and Serve: Finish with sliced green onions and a dollop of sour cream or Greek yogurt for creaminess. Serve warm.

Notes

  • Choose uniform sweet potatoes for even cooking.
  • Warm chicken slightly before tossing in BBQ sauce for best flavor absorption.
  • Wrapping sweet potatoes in foil during baking softens the skin and keeps potatoes moist.
  • Avoid overstuffing the potatoes to make handling easier.
  • Broil for 1-2 minutes to achieve bubbly, crispy cheese topping, if desired.
