Easy to prepare and versatile as a main or side, it offers savory, cheesy goodness with simple ingredients and minimal fuss, perfect for cozy nights or potlucks.

Ingredients

Scale

Mushroom Mixture

  • 12 oz fresh button or cremini mushrooms, cleaned and sliced
  • 2 tbsp butter (for sautéing)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Creamy Cheese Base

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 tsp fresh thyme leaves
  • Salt and pepper, to taste

Topping

  • 1 cup breadcrumbs (or gluten-free breadcrumbs/crushed crackers for GF)
  • 2 tbsp melted butter

Instructions

  1. Prepare the Mushrooms: Clean and slice the mushrooms. Heat butter in a skillet over medium heat and sauté the mushrooms until they release their moisture and turn golden brown. Add chopped onion and minced garlic towards the end, cooking until fragrant and softened.
  2. Mix the Creamy Base: In a large mixing bowl, combine softened cream cheese, sour cream, and shredded cheddar cheese. Stir until smooth and creamy. Season with salt, pepper, and fresh thyme to add herbal freshness.
  3. Combine Ingredients: Fold the sautéed mushrooms, onions, and garlic into the creamy cheese mixture, mixing gently to evenly distribute all flavors.
  4. Prepare Casserole Dish and Topping: Grease a baking dish and transfer the mixture evenly into it. In a small bowl, mix breadcrumbs with melted butter and sprinkle evenly over the top to form a golden, crunchy crust once baked.
  5. Bake to Perfection: Preheat oven to 350°F (175°C). Bake the casserole uncovered for 25-30 minutes or until the top is bubbly and golden brown. Remove and allow to cool slightly before serving for the cheese to set beautifully.

Notes

  • Use fresh mushrooms for better flavor and texture.
  • Do not overcrowd the pan when sautéing to avoid steaming the mushrooms; cook in batches if needed.
  • Soften cream cheese beforehand to ensure a smooth mixture.
  • Spread breadcrumbs evenly in a thin layer to achieve the perfect crispy topping.
  • Let the casserole rest 5-10 minutes after baking to firm up and enhance flavors.
