Ingredients

Scale

Fruit and Sweeteners

  • 2 cups firm, tart apples (such as Granny Smith), peeled, cored, and finely chopped
  • 1/3 cup brown sugar
  • 1 tablespoon lemon juice

Spices

  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves
  • Pinch of salt

Pastry and Fats

  • 1 sheet puff pastry, thawed
  • 2 tablespoons butter

Finishing

  • 1 egg (for egg wash, beaten)

Instructions

  1. Prepare the Apple Filling: Peel, core, and finely chop the apples. In a skillet over medium heat, melt the butter. Add the apples, brown sugar, cinnamon, nutmeg, lemon juice, and a pinch of salt. Cook gently until the apples soften and the mixture becomes fragrant and slightly thickened. Set aside to cool.
  2. Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet. Cut into equal squares or circles, ensuring consistent size for even cooking and easy assembly.
  3. Assemble the Bombs: Spoon a small amount of cooled apple filling into the center of each pastry piece. Avoid overfilling to prevent leakage. Fold the pastry over the filling to create a sealed pouch or ball shape. Pinch the edges tightly with a fork or fingers to seal.
  4. Apply the Egg Wash: Beat an egg and gently brush the egg wash over each Apple Pie Bomb for a shiny, golden-brown finish.
  5. Bake to Perfection: Preheat the oven to 375°F (190°C). Place the Apple Pie Bombs on a parchment-lined baking sheet and bake for 18-22 minutes, or until puffed and golden brown. Allow to cool for a few minutes before serving.

Notes

  • Chill your puff pastry to prevent sticking and ensure flaky layers.
  • Do not overfill to avoid bursting and leaking during baking.
  • Use tart apples like Granny Smith to hold their shape and balance sweetness.
  • For a deeper golden color, brush with egg wash twice—once before baking and once halfway through.
  • Allow the bombs to cool slightly for the filling to set and to prevent burns.
